Garlic Thyme Fondant Potatoes
Fondant potatoes are a homey yet elegant side dish that melt in your mouth!
Ingredients:
4 large russet potatoes
1 Tablespoon vegetable oil
2 Tablespoons butter, cut into cubes
2 garlic cloves, thinly sliced or minced
3 sprigs thyme
kosher salt
Freshly ground black pepper
1 cup chicken broth
Directions:
Preheat oven to 450° F.
Peel potatoes and slice them into 2 inch thick cylinder shapes. Season generously with salt and pepper.
In a large skillet over medium high heat, heat vegetable oil, butter, garlic and thyme until butter melted.
Add potatoes flat side down.
Cook until golden, about 5 minutes. When golden, flip potatoes and let other side of potatoes get golden, 5 more minutes.
Add chicken stock to the skillet and place in the oven.
Bake until tender, 25-30 minutes.
Spoon chicken stock over potatoes and serve.
