Apple Pie Muffins


These muffins have all the goodness of apple pie and they are completely portable to take with you on your way to work or school. Although these muffins may not have the same puffy look of beautiful muffins from the bakery, they taste incredible!

Ingredients:

Batter

1 can (21 oz.) apple pie filling, chopped

1 c. sugar

1/2 c. oil

2 eggs

1 tsp. vanilla

2 c. flour

1 tsp. cinnamon

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

Streusel topping

1/2 c. brown sugar

3 tbsp. sugar

1/4 c. butter

3 tbsp. flour

1 tsp. cinnamon

1/2 c. nuts (optional)

Instructions:

Preheat oven to 350°F.

In a large bowl, mix together sugar, oil, eggs and vanilla.

Add chopped pie filling.

Combine flour, cinnamon, baking powder, soda and salt.

Add to apple mixture.

Fill muffin tins half full.

Combine topping ingredients and sprinkle over batter.

Bake for 15-20 minutes.

Makes 2 dozen.
