Slow Cooker Chili
Perfect for game days, family gatherings, or any time the chili craving hits.
Ingredients:
2 Tablespoons olive oil
2 pounds sirloin steak, cut into very small cubes (1/4” or smaller)
2 onions, diced
1 green bell pepper, finely diced
2 Tablespoons garlic, minced
2 (10 ounce) cans Mexican-style diced tomatoes (like Rotel)
1 (15 ounce) can crushed tomatoes
3 Tablespoons cumin, divided
2 Tablespoons chili powder
2 Tablespoons salt, divided
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
3 (14 ounce) cans kidney beans, drained and rinsed
1 1/2 cups water
Optional Toppings
Cheddar cheese
Green onion
Sour cream
Directions:
Heat oil in frying pan.
Season beef with 1 Tablespoon salt, ½ teaspoon pepper, and 1 Tablespoon cumin.
Cook beef, onions, peppers, and garlic in pan for approximately 10 minutes until meat browned.
Transfer beef mixture to slow cooker.
Add remaining ingredients.
Cook on low for 6 – 8 hours.
Serve with desired toppings.
