Easy Sausage and Shrimp Jambalaya


Most jambalayas take hours of prep and cooking, but you can have this one on the table in about an hour with same delicious taste!

Ingredients:

3 teaspoons olive oil, divided 1 (14 oz.) pkg. smoked sausage, sliced approx. 1/4 inch thick

1 pound cooked shrimp, tail-off

Directions:

In a large skillet heat 2 teaspoons of olive oil. Add the sausage, shrimp and cajun seasoning.

Cook over medium heat until lightly browned. Remove with a slotted spoon and set aside on a plate.

Add the remaining olive oil to the pan.

Add the onion and peppers to oil. Sauté over medium heat for 10 minutes.

Return the sausage to the pan along with the remaining ingredients.

Cover and cook over low heat for 30 minutes, or until rice is tender, stirring occasionally so rice does not burn or stick to the bottom.
