Potatoes and Carrots Roasted In Duck Fat
These roasted potatoes and carrots would be a perfect side for any meal (Shown with roasted duck).
Ingredients:
6 small red potatoes, cut into 1” pieces
3 large carrots, cut into 3/4” pieces
Salt, to taste
Black pepper, to taste
2 Tablespoons duck fat, warmed
Instructions:
Preheat oven to 350°F.
Place cut potato and carrot pieces in a large bowl.
Salt and pepper, to taste.
Add duck fat.
Toss together until vegetables evenly coated.
Spread vegetables in a single layer on a foil lined baking sheet.
Cover with foil.
Bake in oven for 1 hour. For crispier, browned vegetables, remove foil for last 15 minutes.
*Note: If cooking with duck in previous recipe, cook at the same temperatures, adjusting the cooking time to 300°F for 1 hour and 15 minutes. Then at 400° F for another 10 minutes. Removing foil for last 10 minutes for crispier, browned vegetables.
