Chicken Green Chile Enchilada Bake


A delicious enchilada bake at a family function that I just had to get the recipe for. When I made, I went back for seconds but my son had finished off the rest of the dish himself...yummy!

Ingredients:

2 cups sour cream

2 (6 oz) cans green chile

2 cups shredded cheddar cheese

2 cans of cream of chicken soup

2 cups shredded chicken, cooked

Corn tortillas

Instructions:

Preheat oven to 350° F.

Mix sour cream, green chile, cheese, soup, and chicken together in a bowl.

Spray 13” X 9” casserole dish with non-stick cooking spray.

Line bottom of dish with a layer of corn tortillas.

Spread 1/3 of chicken mixture over tortillas.

Repeat layering two more times.

Top with cheese.

Cover with foil and bake for 20 - 25 minutes.
