Soft Lemon Supreme Cookies

These sweet and tart cake mix cookies are ridiculously easy and beyond delicious!

Ingredients:

1 pkg. Lemon Supreme cake mix

1/3 cup vegetable oil

2 eggs

3 Tablespoons lemon juice, divided

1 cup powdered sugar

Instructions:

Preheat oven to 350°F.

Mix cake mix, oil, eggs, and 1 tablespoon lemon juice together. Dough will be stiff.

Drop dough on ungreased cookie sheet. (I always line cookie sheet with parchment paper)

Bake for 8 -10 minutes for 2 1/4” – 2 1/2” cookies (size if using small cookie scoop).

While cookies are baking, make glaze: mix powdered sugar and 2 tablespoons lemon juice together in small bowl.

Let cookies cool for 1 minute, then drizzle with glaze.
