Soft Peanut Butter Cookies
The perfect peanut butter cookies! Not only were they soft, but I was amazed at what rolling in sugar did. The perfect added touch - not too sweet...absolutely delightful!
Ingredients:
1 cup peanut butter (I prefer crunchy peanut butter)
1 cup packed brown sugar
1 cup granulated sugar
1 cup butter, softened
2 eggs
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract
2 1⁄2 cups flour
Optional: Additional 1/2 cup granulated sugar to coat balls
Directions:
Preheat oven to 350°F.
Cream butter, peanut butter and sugars together.
Add eggs, one at a time, beating well.
Add baking soda, powder and vanilla.
Stir in flour.
Roll into balls. Rolls balls in sugar (optional) to coat.
Place balls on ungreased cookie sheet (parchment paper lined for best results) and flatten cookies, using a fork, in a criss-cross pattern.
Bake 7 – 9 minutes (adjust to suit your oven and size of cookies!) until lightly browned.
