Chorizo, Egg, and Potato Burritos


Delicious breakfast burrito!

Ingredients:

1/2 pound chorizo (I prefer beef, but most common is pork and taste great too)

6 eggs

3 potatoes, diced

1/2 cup shredded cheese (I prefer Mexican blend, but choose your favorite)

2 Tablespoons vegetable oil

Salt, to taste

Pepper, to taste

6 burrito size flour tortillas, warmed

Optional additional toppings

Sour cream

Salsa

Avocado, diced

Tomato, diced

Onions, diced

Directions:

Heat oil in frying pan.

Add diced potatoes to oil. Salt and pepper to taste.

Cook potatoes until tender, but not mushy, approx. 10 minutes.

While potatoes cooking…In another frying pan, cook chorizo until done, approx. 5 minutes.

Add eggs to chorizo. Stir well to scramble eggs into chorizo.

Cook chorizo and eggs together until eggs cooked thoroughly.

Add chorizo and egg mixture to potatoes. Mix well.

Spoon approx. 1/2 cup of mixture onto center of a tortilla – leave space on one side for folding at end.

Top mixture with cheese.

Top with any additional optional toppings desired – I prefer the burrito as is, but salsa and sour cream a hit with others here.

Fold end with no mixture over, then fold bottom over mixture and roll into burrito.

Serve and enjoy!

(I prefer two pan method to ensure potatoes cook thoroughly, but can be cooked in same pan. For one pan method, cook potatoes until half done, approx. 5 minutes, then add chorizo. Once chorizo done, add eggs. Cook until eggs thoroughly cooked.)
