Chicken Parmesan


Best chicken parmesan I have ever had! This version of the classic Italian dish is very flavorful and satisfying!

Ingredients:

4 boneless skinless chicken breast halves

1 cup all-purpose flour

1 cup Italian breadcrumbs

1/2 teaspoon garlic powder

1/4 cup freshly grated Parmesan

2 eggs, beaten

Salt and pepper, to taste

4 teaspoons butter

2 cups spaghetti sauce

1 cup shredded mozzarella cheese (or 4 slices)

2 teaspoons freshly grated parmesan cheese

Spaghetti, cooked

Directions:

Prepare breading station with 3 large mixing bowls: 1 bowl with flour, another with egg mixture, and last bowl with breadcrumbs, garlic powder, and 1/4 cup Parmesan mixed with a fork.

Pound chicken to flatten. Season chicken with salt and black pepper.

Coat each piece of chicken in flour and shake off excess, dip into egg, and lastly in breadcrumb mixture. Repeat steps for balance of chicken and set aside on a plate.

Fry in butter in hot skillet, turning and browning for 10 minutes or until chicken is done.

Remove from skillet.

Add spaghetti sauce to skillet and heat thoroughly.

Add chicken back to skillet.

Place mozzarella on top of chicken.

Sprinkle with remaining parmesan.

Cover and cook until cheese is melted.

Serve over a side of cooked spaghetti.
