Oven Baked “Campfire” Chicken
Just because you aren't camping, it doesn't mean you can't enjoy a delicious "campfire" meal.
Ingredients:
This is PER SERVING...
1 chicken leg quarter or 2 chicken pieces per serving (1 drumsticks and 1 thigh)
1 tablespoon butter
1 corn on the cob, halved
1 potato, quartered
1 carrot, quartered
Salt and pepper
1 teaspoon poultry / chicken seasoning
1 teaspoon olive oil
1 large square of heavy duty aluminum foil
Instructions:
Preheat oven to 425°F.
In a skillet, melt butter over medium heat.
Place chicken pieces in skillet and brown the skin – chicken will finish cooking in oven.
Place browned chicken in the center of foil. Season with poultry / chicken seasoning.
In a mixing bowl, add one serving of vegetables, olive oil, season with salt and pepper. Toss well to make sure each vegetable is lightly coated with olive oil, salt and pepper.
Add vegetables to foil.
Wrap chicken and vegetables with the foil making sure it is tightly packed.
Place foil packets directly on middle rack of oven.
Cook for 45 minutes.
Carefully unwrap foil (it's hot) and enjoy!
