Chicken Bombs
These are truly THE BOMB!!!
Ingredients:
2 boneless, skinless chicken breasts (makes 4 bombs) 2 jalapenos, sliced in half lengthwise and cleaned 8-12 slices bacon (depending on size of breasts and width of bacon) 2 oz. cream cheese, softened 1/2 cup colby jack or cheddar cheese, shredded Salt and pepper, to taste 1/2 cup BBQ sauce (I used Sweet Baby Ray's Honey BBQ)
Instructions:
Preheat oven to 350°F.
Slice chicken breasts in half (like a hamburger bun).
Place chicken between wax paper or plastic wrap and pound until 1/4" thick.
Season chicken with salt and pepper.
In a small bowl, mix the two cheeses together.
Fill each pepper half with approximately 1 Tablespoon of cheese mixture.
Place the pepper on the chicken breast and wrap it up as best you can.
Wrap each chicken breast completely with two – three pieces of bacon. Use toothpicks to hold bacon in place while cooking.
Bake in oven for 30 - 40 minutes. Bake with no BBQ sauce for the first 20 minutes, turning once to help cook the bacon. Cover in BBQ sauce and finish baking until chicken is done.
Transfer to plate and slice into 1/2" slices.
