Loaded Mini Stuffed Red Potatoes


Stuff mini red skin potatoes with bacon, onion, and cheese for a cute and scrumptious appetizer!

Ingredients:

6 – 8 red potatoes

3-4 slices cooked bacon crumpled into bits (save some for garnish, if desired)

1/4 cup cheddar cheese

1/4 cup swiss cheese

1 green onion, finely chopped

4 Tablespoons butter, melted

Sour cream, if desired for garnish

Kosher salt, to taste

Black pepper, to taste

Directions:

Boil red potatoes for 15 minutes.

Preheat oven to 400°F.

Cut bit off each end of potato and cut in half.

Scoop out centers and reserve in bowl.

Place on baking sheet.

Sprinkle potatoes with salt.

Mash potatoes reserved in bowl.

Add cheeses, bacon, onion, salt, pepper, and butter. Mix Well.

Stuff potatoes with mixture. (I overstuff with heaping scoop)

Bake for 10 minutes, until heated thoroughly.

Garnish with sour cream and bacon crumbles, if desired.
