Gluten-free Breakfast “Burritos”


Who needs that pesky tortilla anyway??? If you are craving a breakfast burrito but not gluten, these egg "tortillas" / wraps are the perfect solution. Delicious as listed in recipe and other filling variations I tried. Simply choose your favorite breakfast burrito filling and enjoy!

Ingredients:

(for 2 egg wraps / gluten-free ”tortillas”)

3 large eggs

1 Tablespoon milk

1 Tablespoon freshly chopped green onion

Kosher salt, to taste

Freshly ground black pepper, to taste

1 Tablespoon butter

4 slices bacon, cooked

1/2 cup black beans

1/2 avocado, thinly sliced

1/2 cup shredded cheddar cheese

Salsa

Other suggested filling options:

Hashbrowns, cooked

Chorizo, cooked

Sausage, cooked

Tomatoes

Directions:

In a small bowl, whisk together eggs, milk, green onion, salt and pepper.

In a large nonstick skillet, melt butter. Once pan is completely coated, add the egg mixture. Let cook approx. 2 minutes, until you can move egg back and forth, then carefully flip and cook 2 minutes more.

Transfer to a plate and top with bacon, black beans, avocado, cheddar, and salsa (or other desired filling).

Roll up into a burrito and serve.
