Stuffed Green Bell Peppers


Stuffed bell peppers...an easy and delicious meal served it’s own vessel
Ingredients:
6 large green peppers

1 pound gound beef

1/2 cup onion, diced

1(16 ounce) can diced tomatoes, drained

2 cups cooked rice (is 1 package if using boil-in bag rice)

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon Worcestershire sauce

1 1/2 cups shredded cheddar cheese

Directions:

Cut off the tops of green peppers; discard seeds and membranes.

Chop enough of the tops to make 1/4 cup diced, set aside.

Cook the whole green peppers, uncovered in boiling water for about 5 minutes; when done, place on paper towels (turned upside down) to drain well for approx. 1 minute.

In a skillet cook ground beef, onion and chopped bell pepper till meat is browned and vegetables are tender. Drain off excess fat.

Add rice, 1 cup of cheese, tomatoes, Worcestershire, salt and pepper to meat mixture. Stir until thoroughly mixed together.

Sprinkle insides of the bell peppers lightly with salt.

Stuff bell peppers with meat mixture. Place in a 13” x 9” baking dish.

Bake, covered in a 350°F oven for 30 minutes. In the last 5 minutes, uncover and add remaining cheese to the top of the bell peppers.
