EASY BREAKFAST BAKE
What do you do when someone wants cinnamon rolls, someone wants scrambled eggs, and someone wants a cheese omelette and you don’t want to cook all morning…compromise with this delicious breakfast bake everyone loved.
This recipe is for a small group using 2 qt. casserole dish. If a larger group, double recipe and use a 13” x 9” baking dish.
Ingredients:
1 can refrigerated cinnamon rolls
6 eggs
1/2 cup shredded cheese
Butter or cooking spray, for baking dish
Directions:
Preheat oven to 350°F
Cut cinnamon rolls into quarters and place in a large bowl.
Whisk eggs in a small bowl.
Pour eggs over cut cinnamon rolls. Stir to mix thoroughly.
Pour into greased 2 quart glass baking dish.
Sprinkle cheese over top.
Bake 18-20 minutes until egg is cooked through.
Drizzle with icing from cinnamon rolls. Note: I was skeptical about adding the icing, but tried both ways and the icing won.
