Pepperoni Pizza Enchiladas


When you can't decide between mexican food or pizza...these Pepperoni Pizza Enchiladas are the perfect delicious compromise!

Ingredients:

10 soft taco size flour tortillas

1 (26 ounce) jar pasta or pizza sauce

1 package pepperoni slices

3 cups shredded mozzarella cheese

Other Pizza Topping Ideas (Since daughter does not care for mushrooms, I put on 1/2 only in pics)

Sausage

Mushrooms

Bacon

Onions

Bell Pepper

Sliced Olives

Directions:

Preheat oven to 350° F.

Pour 1/2 cup pasta sauce into 9×13 inch baking dish, spreading evenly.

Assembly

Spread about 2 tablespoons pasta sauce over center of each tortilla.

Layer with about 5-6 slices of pepperoni then top with about 2-3 tablespoons of shredded cheese.

Roll each tortilla then place seam side down into baking dish.

Continue filling and rolling tortillas until all have been placed into the baking dish.

Top with remaining sauce spreading evenly.

Add 3/4 cup shredded cheese.

Layer with pepperoni and any other pizza toppings you like.

Finish with more cheese.

Bake for 20 minutes or until cheese is hot and melted.

Remove and serve.
