Bacon, Egg, and Cheese French Toast


Can’t decide if want a breakfast sandwich or French toast…why not have both!

This recipe is for two french toast sandwiches. Increase recipe as necessary.

Ingredients:

5 eggs

3 Tablespoons butter

3 slices of bacon, cut in half to make 6 pieces

4 slices bread

1/2 teaspoon vanilla

1/8 teaspoon cinnamon

1/8 teaspoon sugar

2 slices cheese

Confectioners sugar, optional for garnishing

Maple syrup, optional

Directions:

Cook bacon to desired crispiness. (If cooking multiple sandwiches, suggest oven cooking method also on this site). Set aside.

Cook scrambled eggs

In frying pan, melt 1 Tablespoon butter.

While butter is melting, whisk 3 eggs together in a small bowl.

Place eggs in pan stirring constantly until scrambled eggs are thoroughly cooked.

Set aside.

In a bowl large enough to fit a slice of bread into, whisk together 2 eggs, vanilla, cinnamon, and sugar.

This next portion of layering sandwiches should be done quickly as bottom bread will begin cooking while layering.

In a large non-stick frying pan, melt 2 Tablespoons butter on low heat.

Dip a slice of bread into egg mixture so that only one side of bread is covered with egg mixture.

Place dipped bread in pan with melted butter, egg side down.

Add slice of cheese on top of bread slice.

Add half of eggs on top of cheese.

Add 3 pieces of bacon on top of eggs.

Dip another slice of bread into egg mixture so that only one side of bread is covered with egg mixture and place on top of other layers, egg side up.

Increase to medium heat.

Cook until grilled golden brown.

Gently flip sandwich and cook other side until golden brown.

Place cooked sandwich on plate.

Sprinkle with confectioners sugar for garnishing, if desired.

Drizzle with syrup, if desired.
