Oven Roasted Sausage, Potatoes and Peppers
Easy and very filling. Perfect recipe when have a group to feed and had a busy day.
Doubled the recipe to feed the group size here this week, but ALL loved so much there was not a single bite leftover. Maybe I should have tripled the recipe :)
Ingredients:
1 package (at least 1 pound) of your favorite sausage (Italian Chicken/Turkey Sausage, Johnsonville, whatever sausage you like. I used Beef Skinless Smoked Sausage)
2 pounds (about 5 – 6 decent-sized) potatoes
1 green bell pepper, seeds removed and diced
1 medium onion, diced
3 Tablespoons olive oil
1 teaspoon garlic powder
Salt & pepper, to taste
Instructions:
Preheat oven to 375°.
Slice sausages into thin rounds, about 1/4” thick.
Cut the potatoes into small 1/2" – 1” pieces.
In a large bowl, combine potatoes, onions, bell peppers, olive oil, salt, pepper, and garlic powder.
Mix well to be sure everything is coated with oil and seasoned evenly.
Spray a 13” x 9” baking dish with nonstick spray.
Place all ingredients in prepared baking dish.
Bake for approx. 30 minutes, until potatoes are tender. Cooking time will vary depending on the thickness of your potatoes and sausage.
