Petit Fours – Lemon Supreme and Devil’s Food Delight recipes

A petit four is a small bite-sized confectionery…and these were little slices of heaven!

This was my first time ever trying these and I must say that although they may not look perfect since a newby at this, they were absolutely delicious. My daughter was so impressed, she even took some to her boyfriend – a 5 star chef.

These can be made with any flavor of cake. I chose devil’s food and lemon. The secret is to add a package of pudding mix to each cake mix for extra moistness then fill with the light, airy whipped cream filling (flavored accordingly).

Ingredients:

Devil’s Food Delight

Cake

Devil’s food cake mix

1 (3.5 oz) box chocolate pudding

Filling

1 (8 oz.) Cool Whip, thawed

1 (3.5 oz) box chocolate pudding

1 teaspoon vanilla

1/2 cup cold milk

Coating

1 lb. milk chocolate / candy melts, melted

Lemon Supreme

Cake

Lemon cake mix

1 (3.5 oz) box lemon pudding

Filling

1 (8 oz.) Cool Whip, thawed

1 (3.5 oz) box lemon pudding

1 teaspoon vanilla

1/2 cup cold milk

Coating

1 lb. white chocolate / candy melts, melted

Directions:

Prepare cake according to package – adding a small (3.5 oz) box of same flavor pudding mix.

Cook as directed.

Let cake cool.

Level cake by removing rounded top using a cake leveler/slicer or knife. Cut off sides and discard with top (in my case…in son’s stomach).

Slice cake into even layers using a cake leveler/slicer or knife. Since I used a knife cutting the two layers was easier (Devil’s Food) than the 3 layers (Lemon).

Spread Filling between each layer – do not add to top.

Cut into approx. 1 1/2” squares.

Using a disposable fork with middle tines removed, hold each square over bowl of melted chocolate.

Using ladle, pour chocolate over square until completely covered. Allow excess to drip off back into bowl to avoid waste.

Place each covered square on wax lined tray until chocolate sets / hardens…approx. 15 – 20 min.

Once chocolate has set / hardened, transfer onto serving tray. I used paper liners for easy pickup for guests eating – great way to serve for parties.
