Bacon, Egg, and Cheese Rollups
This recipe makes 4 roll ups – increase recipe as needed. Figure 2 - 4 roll ups per person, depending on appetite. Typical package of bacon will make 8 rollups.
Ingredients:
1 teaspoon butter
2 eggs
Dash of salt
Dash of pepper
4 slices bread
4 slices cheese
4 slices bacon, cut in half to make 8 pieces
Note: This is based on two slices wide enough to cover bread. If cut thin, need 6 slices cut into 12 halves. My package of bacon had some slices thicker than others, so some roll ups had 2 pieces and some had 3 pieces.
Directions:
Whisk eggs in small bowl.
In small frying pan, melt butter. Add eggs and scramble until lightly done. Set aside.
Cut crust off bread.
Flatten bread with rolling pin.
Lay out 2 - 3 half slices of bacon (depending on thickness), sides touching or slightly overlapping.
Place a slice of bread on top of bacon.
Place a slice of cheese on top of bread.
Add 1 1/2 - 2 teaspoons of scrambled eggs along edge of bread, staying away from edge - will spread as roll up.
Starting at one end, roll up until completely rolled.
Place rolls in frying pan with sides where bacon ends cooking first to seal.

Turn rolls on each side until bacon fully cooked.
Serve.
I cut mine into bite size pieces with a knife - easier than cutting bacon with fork. Others preferred to eat with hands like a small burrito...just not me.
