Meatball Stuffed Cheesy Garlic Rolls
My kids love meatball subs but they can be very messy so thought I'd try something new...everyone loved them!
Ingredients:
1 1/2 Tablespoons olive oil
1 1/2 lbs. ground beef
1 1/2 Tablespoons dried oregano
1 1/2 teaspoons salt
1 1/2 teaspoons pepper
12 ct. large dinner rolls from bakery (can use prepackaged rolls but will be smaller & softer)
3 tablespoons butter, melted
3 cloves garlic, minced
1 1/2 Tablespoons chopped parsley
1 cup shredded parmesan
1 jar marinara sauce
2 cups shredded mozzarella
Directions:
Preheat oven to 350°F.
In a large bowl, mix ground beef, parmesan, oregano, salt, and pepper until evenly distributed. Roll 12 meatballs.
Heat olive oil in sauté pan on medium heat. Brown meatballs on all sides.
While meatballs are cooking….
Cut a hole into the rolls large enough for meatballs to fit on the top of each roll.
Add minced garlic and chopped parsley to melted butter. Brush the mixture to each roll.
If using prepackaged soft dinner rolls, heat in oven for approx. 10 minutes until slightly toasted.
Sprinkle approx. 1/4 of the shredded mozzarella cheese in bottom of rolls.
Place a cooked meatball into bread hole.
Add 1 – 1 1/2 Tablespoons of sauce on top of meatball in bread hole.
Top rolls with remaining shredded mozzarella cheese.
Cook in oven approx. 10 minutes until cheese is melted.
