Biscuits and Gravy Breakfast Bake
When you have a group to feed or can't decide between a breakfast sandwich or biscuits & gravy...here's the delicious solution!
Ingredients:
12 oz. refrigerated buttermilk biscuit dough (I used Grands Flaky Layers, which are slightly bigger and I prefer flaky biscuits)
6 eggs
For gravy
1 lb sausage, any flavor
2 cups milk
1/8 c. flour
salt and pepper to taste
If don’t want to make own gravy, using the milk & flour, can take short cut using:
1 (2 3/4 ounce) package peppered gravy mix (makes 2 cups) to add to sausage.
Optional
1 cup cheese, shredded
Instructions:
Preheat oven to 350°F.
Grease (or use non-stick spray) a 13×9 pan.
Cut 1/2 of the biscuits into approx. 1” pieces.
Place biscuit pieces in bottom of pan.
Cook for approx. 4 - 5 min until just barely beginning to brown.
While biscuits cooking…
Brown the sausage in skillet.
In bowl, whisk milk and flour (or cheat and use a food processor to ensure no lumps).
If using packaged gravy mix, prepare as instructed and add to sausage and skip next step.
Add to sausage in skillet, stirring constantly until gravy thickens.
Pour sausage gravy over cooked biscuit pieces.
If using optional cheese, sprinkle cheese over gravy.
In bowl, whisk eggs well, then pour over layers in pan.
Cut remaining 1/2 of biscuits into quarters.
Place over top of layers, spread evenly apart.
Cover pan with foil. Bake for 20 minutes.
Remove foil and bake additional 5 – 7 minutes until top biscuits are golden brown.
