French Toast Roll-Ups


Note: I cooked larger batch with multiple fruit fillings (Apple, cherry, blueberry, and peach) since had family staying with me. About half enjoyed just sprinkled with sugar and about half loved with syrup added.

Top left: Apple

Top right: Peach

Bottom left: Cherry

Bottom right: Blueberry

Ingredients:

10 slices sandwich bread Approx. 2 oz. cream cheese, softened Fruit filling of choice (I used canned pie filling, but can use fresh fruit) 2 eggs 1 Tablespoon milk ½ teaspoon cinnamon ½ teaspoon vanilla extract

2 Tablespoons butter

Optional

Confectioner's sugar, sprinkled on top before serving

Syrup, drizzled over top before serving

Directions:

Cut crust off bread.

Roll each slice of bread flat with a rolling pin.

Spread approx. 1 teaspoon of cream cheese along the edge of the bread.

Top cream cheese with approx. 1 tablespoon fruit filling.

Hint: Keep fruit away from edge as it will spread as rolling bread.

Roll up starting with edge with filling.

Repeat until all rolls are completed and set aside. In a bowl, combine eggs, milk, cinnamon, and vanilla.

Dip each roll-up in egg mixture.

Pan fry in a buttered skillet until all sides are golden brown.

Sprinkle with confectioner’s sugar, if desired

Drizzle with syrup, if desired
