Bacon Wrapped Potato Roses


These potato roses were beautiful, but did not take a side picture so added the picture on the right from another site to show bacon. The bacon and potatoes will be cooked more using this recipe and much better...that recipe also used more potatoes so petals did do not flare out as much for a better presentation, in my opinion. BEAUTIFUL side for any dinner, but especially a romantic dinner!

Makes 6

Ingredients:

6 potatoes

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

2 1⁄2 Tablespoons olive oil

12 slices bacon

1/2 cup shredded parmesan cheese

Directions:

Preheat oven to 400° F.

Peel potatoes, if desired, and slice lengthwise between 1/16 to 1/8 inch thickness using a mandoline or vegetable slicer.

In a bowl, combine potatoes, garlic powder, salt, black pepper, and olive oil. Toss well to coat the potato slices.

Place 2 pieces of bacon on a work surface. Top piece should be laid approx. 1 inch lower than bottom piece so petals overlap evenly.

Arrange potato slices along one edge so they are slightly overlapping.

Sprinkle evenly with parmesan cheese.

Carefully roll up the bacon and potatoes to form a rose, then put it in the cup of a muffin pan.

Repeat with remaining ingredients.

Bake for approx. minutes or until the potatoes are cooked through and the edges are crispy. If the potatoes start to brown too quickly, cover the pan with foil and continue baking until done.
